Egg Salad
YUMMY TOFU EGG SALAD – ALL VEGAN
Thanks to Eileen’s friend for this recipe.
One pound of tofu, frozen first, and then thawed out
- 1/3 red onion
- 2/3 cup Vegenaise
- 3 stalks of celery
- 1/2 cup of pickle relish (mustard-free)
- 1 tsp turmeric
- 1 1/2 TBSP finely chopped fresh dill
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/2 tsp celery salt
Crumble the thawed tofu in a colander. Squeeze out as much liquid as possible. Transfer the crumbled tofu into a large bowl. Add chopped celery and red onion, turmeric, salt, pepper and celery salt. Add Vegenaise and relish and mix well. Add the dill last and taste the mixture. At this point you may wish to add more relish or more Vegenaise or more spices to taste. The turmeric, while good for you, is really for color. You can add more if you would like the salad to have a more yellow color. You can add a little garlic or other spices to your liking. Serve this cold with crisp lettuce as a sandwich filling or on crackers. Frankly, I eat it right out of the bowl! I use a little more relish and Vegenaise than the recipe calls for. You should doctor this up to your preferences. Oh those carnivores do not know what they are missing!!
